In-house roasting is a barista’s dream, and would offer specialty coffee shops substantially more flexibility and freedom with their flavors. Not to mention the potential cost-savings.

But in-house roasting, as currently practiced, doesn’t make sense for most businesses. Gas-powered medium-batch size roasters in the 3-5kg range remain the standard go-to move. Unfortunately, these machines are huge and unwieldly — and gas is an environmentally un-friendly hassle that is already illegal in some cities, with more soon to follow.

And then there is the biggest problem, that of time. Roasting great coffee on these traditional machines requires extensive training — and many hours spent babysitting each and every roast in order to guarantee consistency. Whatever cost-savings you may dream up while looking at green bean prices are inevitably eaten up by the problem of time.

But in 2021, we have the technology to change things.

Re-thinking small batch roasters...

Another clunky, old-fashioned gas-powered roaster isn’t going to change our experience of specialty coffee. Impossible.

So, screw ’em. Let’s move forward. Data-driven roasting is the new kid on the block, and she makes many things possible that simply weren’t before — automation being chief among them. We believe that with accurate measurements, precise heat application, and smart AI, an automatic small-batch electric roaster able to churn consistently great coffee would revolutionize specialty as we know it.

That’s why we took what we learned from our first roaster, the Bullet R1, and paired up with world-renowned Danish industrial design studio, Kilo Design, in order to re-imagine the look, feel, and functionality of small-batch machines.

The AiO is a fully-automatic 2kg roaster that requires no gas, fits on your countertop, and will provide enough fresh roasted coffee for even the busiest cafes in the world. It is a breath of fresh air for the coffee industry. 

Who is the AiO for?

First: the AiO isn’t for home hobbyists. It is not a 2kg version of our home roaster, the Bullet R1. For a detailed explanation of the differences between the two, please take a look at this deep-dive into the two machines.

This is a professional, industrial-strength roaster capable of roasting coffee in large volumes. It was designed with busy cafes in mind, but we also see this technology merging seamlessly with the blossoming micro-roastery movement. 

The first manufacturing runs of the AiO will be limited in number, and we want the most meaningful feedback from the busiest users before we push the machine into mass production in 2022, so we will be hand-picking the very first users.

What does roasting on the AiO feel like?

When roasting manually, the AiO feels a lot like a traditional 2kg drum roaster. The main difference is that it is far easier for those with less experience to make smart adjustments mid-roast, due to the AiO’s advanced electronics and data feedback mechanisms.

In automatic mode, however, it does not resemble anything “traditional” – and that 2kg capacity needs to be re-evaulated. Roasts can be run as programs, and each step can be completed without any need for user interaction. Automation is what sets the AiO apart from other machines. 

In automatic mode, then, the workflow for the staff is quite lean. You simply select a recipe that has either been downloaded from our cloud platform, Roast.World, or designed by your resident “expert”. (We use the term “expert” loosely, because roasting very good coffee on the AiO does not require a PhD in coffee wizardry: you just need some good green beans!)

After you select the recipe, you load the greens, let it run, and about ten minutes later you can bag the roasted coffee.

It’s a process that can be repeated throughout the day, 2kg every fifteen minutes without second guessing a moment. Baristas can focus on serving customers while the AiO continues to roast batch after batch of fresh coffee, on its own.

Induction Heating

The heart of the AiO is its induction heating, pioneered in our first roaster, the Bullet R1. It’s the same technology used to heat induction stoves.

Induction heating is responsive. Roasting on the AiO feels far more like roasting with gas than an electric roaster — in other words, the changes you make during the roast have a more immediate impact than with traditional, slow-to-react electric roasters, on which you need to guess ahead.

It’s also very powerful. Induction directly generates heat within the drum itself. As a result, the AiO is much smaller and lighter than other 2kg roasters — in fact, it can fit on your countertop, right next to your espresso machine.

Precise heat application is essential for automatic playback, so the AiO measures exactly how much energy is necessary to achieve a certain roast level.

Last but not least, it’s green. Induction is far more efficient than traditional electric roasters, and unlike burning gas, it does not release CO2 into the atmosphere, making it a great choice for our environment.

IBTS

For the AiO to roast coffee automatically, it needs both precise heat application and accurate measurements. Induction heating takes care of the the former, but the latter requires a different technology, an infrared temperature sensor (IBTS) for both the drum and the beans.

We developed this new technology because traditional bean probes — the kind found in most roasters — don’t work very well.

Coffee geek warning: This is a bit technical, but we’ll try to explain. A traditional bean probe can only report how hot the bean probe itself is, and it takes time for the bean mass to heat up the probe. This create a lag between the actual temperature of the beans and the temperature being read by the probe.

These temperature readings will also vary wildly depending on the batch size you are roasting — in some cases the first crack temp may vary by 20 degrees or more. This makes it very difficult to match profiles across different batch sizes. 

On the other hand, infrared is instantaneous, and requires no contact with the beans themselves.

Infrared temperature sensing works by measuring infrared light emitted from objects. We are able to measure the surface temperature of the bean mass in real-time, with no lag.

Because the measurements are taken from a distance rather than relying on direct contact with the bean mass, the IBTS is not affected by batch size the same way that traditional probes are, making all the data it collects more meaningful. First crack temps occur at the same temperature regardless of batch size.

Air Heating and Chaff Collection

Our first roaster, the Bullet R1, allows for precise control of fan speed, so that we can adjust how much air is pulled from the environment into the drum at any time during a roast. This system works well, but there is no way to control for variances in ambient temperature, and higher fan speeds will necessarily have a cooling effect on the roast.

For the AiO, we wanted a system that  would allow to us to precisely control the temperature of the air flowing into the drum. By heating it with precision, we mitigate the issue of variable ambient temperatures and as a bonus, we can crank up the airflow without cooling the beans.

Of course, every roaster needs to deal with chaff. On the AiO, we use a cyclone to separate the chaff, so that it can then be discarded quickly and easily afterwards, with no need for a filter.

Modular Design

Anyone familiar with our previous roaster, the Bullet R1, knows that we continuously improve our designs, while also striving to make each and every upgrade available to all users – even to our original pre-order customers. We believe that every user should have access to best and latest technology. We don’t want anyone to be left behind.

The AiO’s design is a reflection of this ethos. It is better to think of it as a platform rather than as a static machine — again, not only a roaster, but also a system. It is inherently modular, with parts that can be easily replaced, or swapped out for parts to improve functionality or introduce new features.

Nothing is welded; nothing is set in stone. It’s built to be upgradable.

That means that when you purchase the base model, what you see is not all that you can get. You will have access to any future technologies that we develop as we continually refine and re-balance the machine with upgrades, new sensing technology, customizations, and smoke filtration systems.

It’s a machine that can grow with your needs, and the choice will always be yours.

Fine Control and Repeatable Results

You have the option to roast manually on the AiO by interacting with its control panel. Here you can monitor the bean temperature and its Rate of Rise while tweaking analog knobs to change drum speed, heating, and fan with precision. You don’t even need a computer.

But you can also control the machine from nearly any internet-ready device, including tablets and smart phones. You do this via our RoasTime for AiO software, and this is definitely the recommended way to roast.

Our RoasTime software will automatically plot your “roast profile” — a visual representation an individual roast that is fundamental to data-driven roasting techniques. By recording changes made during the roast and graphing bean temperature over time, these roast profiles offer a great deal of insight into your techniques, and ultimately can be converted into “roast recipes”, which are a set of instructions for automatically finishing a roast on the AiO, so that you can repeat roasts again and again with stunning consistency.

Better still, roast recipes and roast profiles are automatically synced to our cloud service, Roast.World, which is an online community specifically for Aillio users. 

At Roast.World, you can analyze past roasts, manage your bean inventory, discover new bean vendors, search for other users, and download profiles and recipes from them.

This makes it possible to use the software to download recipes from others. But if you’re feeling cocky, you can create your own recipes from scratch, with no other inputs. 

The 'A.I.' in 'AiO'

We have the technology...

As more and more users begin using the AiO system, it will become even smarter. That’s because we can begin leveraging the data it collects with machine learning and artificial intelligence.

Because the AiO’s sensors are capable of capturing so many different data points, it becomes possible to map those inputs and generate predictive outputs, through the magic of neural networks.

If that all sounds complicated — well, it kind of is. But simply put, the AiO is essentially making decisions by weighing evidence it has collected over time. 

For instance, on a local level, we can use AI to automatically adjust for small variations between your machine and the ‘mean’ performance of all connected AiO machines. Everyone’s roasting setup is unique in some small ways —  local ambient temperatures, insulation, barometric pressure, and variations within machine tolerances —  but these can be averaged, and the AiO’s performance tweaked to approach the mean, making the automatic playback of other people’s roasts — or even your own under changing circumstances — even more accurate.

In addition to consistent roasting, AI can assist roasters in myriad others ways.

It can answer some important questions, both for beginners and advanced users:

1. When exactly will I need to order more of a particular green bean to keep up with customer demand?

2. What temperature will my beans be at a certain time in the roast if I continue the roast without adjusting the power or fan settings?

3. How will changing the power setting of a given roast recipe alter the curve of the roast profile?

 

 

Maintenance and Service

 

 

When you’re running a business, you want a machine that is reliable, easy to maintain, and simple to service. Because the AiO is modular in design, it is easy to access parts in need of attention, or replace them if need be. This is a huge benefit for users lacking technical skills — there is nothing scary about maintaining an AiO.

But there is more going on here than modularity. When we developed the Bullet we designed it to collect data – not just typical roasting data, but also debugging data – to measure performance and if servicing is required, to assist in troubleshooting diagnostics. This data has allowed us to provide much better support for customers.

The AiO similarly collects debugging data, but far more of it, and we can use it in a much smarter way.

On the maintenance side, we’re able to measure the performance and energy usage of each individual component, to help you schedule health checks and cleanings as necessary.

On the servicing side, we can can simplify the troubleshooting process should any problem arise. All inputs and outputs are short circuit protected and all moving parts have sensors to measure movement. Because we are able to delve deep into the health of individual components, you’ll always have a sense for how well your machine is running.

As a simple example – the drum has a sensor to measure the RPM, but the motor that drives the drum also provides this signal. If the drum is not turning, but the drum motor is, then we know the problem is with the mechanical coupling and belts, and the AiO will let you know this. If both of these sensors fail, we can measure the power the motor is using, and use this of an indication that its still running. So in a sense, a single moving part has 3 measuring points. This can also help determine just how smooth the machine is running – and when it is time for maintenance.

General Roasting

Short answer: No. We will provide basic recipes for different varieties of coffee that can be run automatically. And you will also gain access to a growing database of recipes and profiles from other users for specific beans — ones that are identical or similar to those you purchase.

Long answer: On the AiO you can accomplish something far more meaningful than pushing a button and stepping away. While the ‘set-it-and-forget-it’ approach is convenient and perhaps necessary at first, if you really want to add your own personal touch to your coffee, you should take the opportunity to learn the basics and grow with the machine. After all, isn’t the ultimate goal to differentiate your shop from others? 

It really won’t be as difficult as you think. Although the roasting process has long been shrouded in mystery — comprehensible only to those select few professional ‘wizards’ — technology is changing the nature of coffee roasting very quickly. A quick crash course can do wonders when paired with accurate data, and we’re confident YOU can be roasting YOUR OWN coffee, perfectly matched to the specific tastes of the customers in YOUR region, country, town, and neighborhood.

You are encouraged to buy whatever coffee you want, from wherever you wish. You will not be locked into any curated marketplaces. Be free. Be yourself.

A roast profile is a visual representation of the data collected during a specific roast, including the bean temperature change over time and any power, fan, and drum speed adjustments made during the roast. It provides a snapshot into what happened to the beans during a particular roast, and it can be useful to analyze roast profiles to learn from your successes — as well as your mistakes.

Roast profiles can also be automatically run. In Playback mode, all the adjustments you made during the roast — from setting the preheat temperature to changing the power and fan settings — will be duplicated according to time. So, for example, if you changed the power setting from P8 to P7 at the three minute mark of the roast, the same change will be made automatically at the three minute mark of the playback.

A roast recipe is a set of if-then instructions to guide a particular roast. In this way it is similar to a roast profile playback, but it can do much more. You can trigger new events according to specific milestones during the roast — these can be time-based like Playback mode, but also temperature based. For example, you can trigger a change from P8 to P7 when the bean temperature (as measured by the IBTS or a traditional bean probe) reaches 120°C. 

Roast recipes form the backbone of automatic playback on the AiO.

Technology

Induction is a means of generating heat by exploiting some basic properties of electromagnetism. You can view a short video about how we use it generate heat within the drum of the Bullet R1 here.

For the AiO, we have built upon what we learned on the Bullet, producing an induction system that is even more powerful and efficient than what we designed before. 

Because heat is generated within the drum itself, induction heating is incredibly responsive compared to traditional electric roasters, lending it a feel more akin to gas. But induction is also incredibly efficient and requires no burning gas, reducing the AiO’s carbon footprint to the bare minimum when powered from renewable energy sources.

In the simplest terms, everything you see is radiating heat in the form of infrared light that you can’t see. But by measuring this light with a sensor, we are able to determine the temperature of a thing instantaneously, without ever needing to contact that thing.

This is very different from how a traditional bean probe works. A probe is inserted into the mass of beans. As the beans heat up, so does the temperature of the probe, but the actual temperature of the beans will always be ahead of the probe, and the amount of beans you put in the drum at a time makes a big difference in the amount of ‘lag’ between the temperature of the probe and the actual temperature of the beans.

In other words, a reading from a traditional probe can tell you how hot that probe is at a given moment in time, and its readings will necessarily be affected by its placement within the machine and the amount of beans you are roasting. This lack of consistency makes working with traditional probes a hassle.

When roasting in automatic mode, the user only needs to interact with the machine twice — once to load the beans, and once to bag them when the roast is finished. 

After loading the beans into the funnel, the AiO will automatically preheat itself to the temperature specified in the Roast Recipe. Then the beans will be dropped into the roasting drum via a pneumatic (pressurized air) mechanism. 

The AiO will then follow the Roast Recipe exactly, and when the roast is finished and the beans are at the desired temperature, they will be dropped into the cooling drum, again via pneumatics.

Once they have cooled in the cooling drum, they will be ejected from the front of the roaster, ready to be bagged.

These automated roasts are made possible by the two key technologies discussed above — induction and IBTS. One provides precise power application, the other provides precise bean temperature measurements.

Shop Requirements

Probably not. It’s not designed with you in mind. Home roasters should consider purchasing our other roaster, the Bullet R1. But… we aren’t gonna argue with you.

It’s designed to fit on a kitchen table. Not including the funnel, or any bean capture tray you may desire, its dimensions are L 60cm W 33cm H 65cm. 

Any standard 200-247V line will be okay.

We are developing an optional smoke cleaning system, but as it is still in development, we cannot say exactly what sort of venting requirements may be necessary — or even if a vent will be necessary at all.

Purchasing the AiO

We are still working on the AiO’s design, and so there is no hard ETA for when it will be available. But before we release it for general purchase, we will be hand-picking customers for the first batch of machines, as we want to ensure we get good feedback.

We are now looking at sometime in 2022. We’ll keep you updated.

For now, the price starts from 15,900 for the base model, and this is what we plan to release first. But in the future, we also plan to offer additional modules for the AiO, so it will depend on what features you purchase — for example, smoke cleaning.

Early-adopters will also be able to purchase additional modules separately as they become available.

Yes, eventually we plan to make it possible to lease the AiO. We are considering a 12 month lease with a 30% down payment.
